Not just a cooking class! We will also discuss the basics of a plant-based diet for a healthy mind, body, spirit and planet. Bring your appetite, and any questions you might have for Mary Ellen. Participants will learn how to prepare the individual elements as well as assembling the bowls and repurposing the leftovers into another meal.

Mary Ellen will be teaching the basic components of a burrito bowl which will include:
Seasoned black beans
Seasoned crumbled Tofu
Seasoned Tempe crumble
Seared or grilled corn
Brown rice
Cashew cream
Guacamole
Baked no oil tortilla chips
Lettuce, sweet peppers, tomatoes, salsa etc.
Mary Ellen has a certificate in Plant Based Nutrition from Cornell and the T Colin Campbell Center for Nutrition Studies, and is currently completing a plant-based cooking course through Rouxbe culinary school. She also has a passion for learning about health and wellness, passing this important information on to others and spending time in nature with her husband and adorable dog Frankie.

I believe that the science is clear that a plant based diet is essential for our health and the restoration of the health of our planet. I am a Christian of deep faith and personally tie this into my faith. My husband and I see this as our calling from God…as caring for our bodies physically as well as spiritually is important to our faith. Eating mindfully and WFPB has been shown to decrease depression and improve sleep, all of which tie together. Caring for Gods creation (earth) is also important.
